Chief Baker

About the role

Four Seasons Resort and Residences Dominican Republic at Tropicalia is seeking a Chief Baker to lead the bakery operation during pre‑opening and ongoing service. Reporting to the Executive Pastry Chef, you will create exceptional breads, viennoiserie and baked products for all outlets, banquets and special events.

Key responsibilities

• Lead daily bakery production, ensuring consistent quality, timely delivery and waste minimisation.
• Develop and standardise a portfolio of artisan breads, sourdoughs, pastries and regional specialties.
• Recruit, train, schedule and coach the bakery team, fostering creativity and discipline.
• Maintain strict food‑safety, sanitation, allergen‑management and HACCP compliance.
• Monitor costs, inventory, labour productivity and collaborate with Purchasing on ingredient specifications.

Required profile

• Culinary diploma or professional bakery qualification.
• Minimum five years of progressive bakery experience in a luxury hotel, resort or high‑volume operation, with supervisory responsibility.
• Fluency in Spanish; working proficiency in English preferred.
• Experience with pre‑opening environments is a plus.

Required skills

• Advanced knowledge of artisan bread production, natural fermentation and sourdough.
• Expertise in laminated doughs, viennoiserie and international baking techniques.
• Strong leadership, organization and production‑planning abilities.
• Food‑safety, sanitation and HACCP compliance skills.
